toyota fx-16 because of the stock 4age. mazda mx3 because of the klze possibilities. festiva for the mazda swap possibilities. pinto/ranger/xr4ti for 302 possibilities. also +1 on se-r sentra, i have very very fond memories of a b13 se-r with a torsen in place of the vlsd
Im going to throw all turbocharged 80s dodges onto this list. You can do a LOT with $2k on one of those.

I had a friend who had a super clean one in high school... her dad was a pro body guy and loved doing that kind of stuff... for the xt turbo he painted it a nice metalic blue with silver racing stripes (nice and wide) down the length of the body and finished it with sparkle flake in the clear coat... it looked perfect :)
but the interior as a hole was amazing... the gauges like in that vid... but you need to check out the rest of the interior... this is the right hand drive in the vid... but it's all the same... even the pistol grip shifter http://www.youtube.com/watch?v=5-F1ZAxofNI&feature=related
