The rear end of my Porsche 914 is sinking a bit and the wheels are cambered in at the top. It doesn't ride like the shocks are bad; the front end is just fine. The car is a 1974 with ~60,000 miles on it.
If I swap shocks in the back how do I confirm the quality of the springs? I have access to a large spring tester at work, but I need specs.

Sounds like the springs have settled from age, not the shocks. Why not replace both as a unit? Springs are the cheaper bits.
914 rear springs were real soft to begin with, like 80 inch pounds. A common upgrade to fix what you describe is 100 inch pound springs.

Just for my own information, are those coil springs or torsional like in the 911?
Torsion up front and coils in back.
100 lb. stock replacements + 2 shocks; it looks like I can get out of Dodge for around $300. Shocks are $100 each, yikes.

We just did a clutch on a 76 2.0 and we are going to be putting a really sweet t321 stainless steel muffler from M&K on it once it gets shipped in.
The exhaust is really a 911 muffler with custom stainless flanges for the 2.0L.

When your stock one gives up you can get one of these for about what an aftermarket replacement is.
I seem to recall there were split spacers available from Automobile Atlanta? to adjust the ride height without having to go with threaded body shocks. They looked like a great big spring type lockwasher.
I've got a FI 2.0. I replaced the very restrictive stock muffler with one of these:

Less restrictive than stock, not as obnoxious as the two pipe center exit I had on the last 914.
Shocks:
KYB = $92. each
Boge/Sachs = $98
Bilstein = $118.
BTW the owner has Billsteins on this car as well as the 140lb Auto Atlanta springs and it feels pretty nice FWIW
