Any ideas on companies who offer this? I'm not looking for coverage on track, I'm thinking for towing, being out of state, etc.
But since I'll likely make the Miata a full-blown TT car over the next year, I don't want to pay full coverage to State Farm for a policy that won't come close to replacing it. The payout might cover the coilovers.

A friend of mine used Hagerty for paddock & trailer insurance. IIRC it covers stuff like theft, fire while stored, paddock bumps and bangs, damage while trailering, etc, for an agreed-upon value at a very reasonable price.
Comp only should work for you, but I'd get a declared value policy. It covers all non moving problems. If you get in an accident while towing your towing vehicle should cover it. I would double check with your agent though. This is what I got from my nationwide guy.

I talked to my SF guy and since they won't do an agreed value policy … he told me that since the comp on the car (all I have on the track car is liability and comp… it's still driven on the street occasionally) wouldn't cover anywhere near it's true value .. just buy it back from the ins co ….
Can't easily buy it back if it has been stolen... and if they recover it, it'll likely be stripped of the good stuff anyways.

Take the tires off one side of the trailer and keep them in the house.
When at home it will be behind a locked privacy fence and the car will be in the garage. I'm not particularly concerned in my neighborhood.
I'm more concerned with possible overnight stops and just being out of town with it.
