I messed my Saab 900's alignment up via tie rod end R&R. Do I really need a thrust alignment or can I just have the toe re-set and call it good?

If you haven't had an alignment in a while, do the whole thing. If it's been done recently, you can get away with just toe.

If it was good before and you just messed with the front toe, all you need to do is reset the front toe. Quickest and easiest alignment setting to change :) The rears are what are going to determine your thrust angle.
