I suspect it depends on the car, what you're doing with it, height of sidewall, etc. Beyond that, I dunno.

On the Celica, it's barely anything at all. You couldn't slip a credit card btween the wheel and the coil over perch. I ground it back a little, but I don't think it's a 1/4". I have run stock wheels with race rubber on my MR2. With no spacer, they rub on the first couple of runs. Then they're fine. Not optimal, but, you know.
On my ZX2SR the rears had a clearance of a piece of cardboard, ie: not much. No problm with rubbing. Never had a problem with the front.
Yeah, you need VERY little. The tire may deform laterally at the bottom but by the time it spins to the top it's centered again, so you dont need much there at all.
As long as it's a classic MacPherson strut -- the position of the tire never changes relative to that part of the strut. As others have said - a miss is as good as a mile. On my old Corolla ITB car I actually slightly dimpled the insert housing to create a credit card's worth of clearance. Raced it that way for 9 seasons with never an issue.
On the rear of my AE92 with coilovers, it's about 4mm, I've run many events like this, no problems. Some people get shorter springs on the rear so they can run wider tires on these things.
When I'm building coil overs, I always make sure the perch is above the tire to give me maximum clearance. That being said, 1/4 sounds good. The tire shouldn't flex inwards at the top. Bad wheel bearings could cause a problem thou.

Don't feel too bad.. I thought the same.. and I don't need any new tyres. (my mom's rendezvouz does though)
Celica wheels before I mounted tires. Yeah. It's close.
As I said, I did grind that mount back a tic, but it's still really close. Seems to be fine.
Many talking.g about wheels when he asked about tires. As long as the tires aren't rubbing under load I wouldn't worry about it.
For the wheel, 1/4" is probably the least I'd feel comfortable with.
