So I found a line on a Tremec T5, brand new, never installed, the right gearset for my 5.0.
It is rated at 300 ft lbs, my 5.0 RX makes 322 ft lbs at redline.
Is this a good trans for vigorous weekend use and a few autocrosses, maybe a classic cruise or two?

Hard to say. I've broken reverse with Nitto DR's, a quick stab of the clutch, and stock engine. I've witnessed stock boxes run 10's, at about 3200#, on slicks. YMMV.
Depends. I've personally put 400FtLbs through one, but if you plan any hard drag launches it will grenade. Is the price right?
Car is lighter than the usual 5.0. So long as the price is right, go for it. Though I won't be carrying it up the hill at RA for you.
Not a drag car, but it is going to be driven like a 310hp RX7 deserves. Yes the price is right, $1600 retail listed at $1k obo.

The 89 Supercoupe made 315 lb-ft, and Ford opted to use the M5R2 in it instead of the T5. Of course, the Bird is a lot heavier than the RX7.
That rating is from a 24 hour cycle test. An occasional burst of power beyond that isn't going to blow it. I'd be more concerned about why your engine makes peak torque at redline!
