Yeah single color available vehicles don't really meet the premise. I want to find something that had options, just none of those options were gray scale. The 93 Cobra for example was only available in red, teal, and black. I need that but with a color like yellow instead of black.
This is too difficult of a task.
Berkeley doesn't count because they offered black, cream, and grey...
...but I say berkeley it anyway because you'd be hard-pressed to find a lack of black anywhere.

Even if I conjure the most obscure oddball, it still doesn't meet the criteria...
...although it is very very very rare to see a 1967-1973 Matra 530 in black, you will see white and silver ones, so that's a no-go too even if most of the 530's are skittles color.
So close but no dice with the 1st gen Twingo - although no white/grayscale they did offer black...
I think Triumph came close in the 70s, but they still had a white. The brownscale was much more common, though.

The "cheaper 'cause it's black" only applies to the brass parts of the car. Eariler cars, more brass. Later cars, more painted steel.
You could get Ts in many colors.
Yes, but per Javelin's question, I believe that the first few years black was not an available choice.

I couldn't find any pictures of a black Fiat Jolly, but they did come in white.

For that matter, the most common interior for Volvo S60R/V70R was blue interior (leather seats, carpeting, baseball stitching)

Apparently the first five and last two years of production, black was not a colour choice but grey was.

Mustang Bullitt- Can't get away from the Black ones, but the 2001 had black, blue and highland green. The new one only comes in black or green.
Ford Focus Kona Edition came with a bike, and only in brown.
One other thought was the golf harlequin. Many colors, none black grey or silver in the panels.

Colors for the '74 X1/9 are listed as green, yellow, blue and orange-red. They didn't list brown on the color chart, but I believe you could also get one in brown. Certainly by '75. Mine was yellow.
White is the really hard one - pretty much every car came in white. But the Spitfire was sold in a lot of colors besides white that didn't include any shade of silver or even black (black was a rare Spit color and only offered once in awhile).

Black and white offered every single year.
They're not the most vibrant colors, but the Nissan Pao and Figaro didn't come in monochrome.
