Wedge Shaped Washers:

Does such an item exist?

I need to bolt two lengths of aluminum angle together into a "Z" shape, but I don't want them to sit completely flush with one another. Is there some kind of angled spacer that will stay in place or do I need to fab something myself?

McMaster calls them 'square bevel' washers.

square bevel washers should be avaliable at any fastener store. They are uses when running a bolt through the end of extruded channel so the angle is always the same
