Three off the top of my head would be 1979 Porsche 930, 1979 Mercedes 450SEL 6.9, and 1973 Mazda RX-2 Coupe.

My 13 Mazda 5 for family duty
And some flavor of 350 powered Suburban for truck things, camping things, work pig things, and off-roading.
Humble dreams out here, but I honestly can't think of a way to improve on it.

I would love to drive a 6.9. I am absolutley smitten with the styling and driving dynamics of the W116. I'm sure a big torquey V8 would not hurt the fun.
All of you idiots posting your list without pictures are getting skipped as I skim the replays for carporn.
My list:
1.) LS swapped and completely restored Defender 90.
2.) Exotic: Ferrari F40
3.) Track Car: Ford GT
Wife's car: E63 AMG
I have a 3 car formula that works well for me so I would stick with that. A daily driver, a toy to drive for fun and a project car.
First would be something for getting to the beer store for supplies. As I am getting older, maybe something with a bit more room.
It would be the first American car I have ever owned.
The Fun car would be this nice little sports car.
The project has to be something that will take a long time to complete and present a lot of challenges. I have an urge to do whimsical. But with room to bring friends along.
