The reciprocal swap is always fun. Like, I have a 429 from a '66 Cadillac that would be hilarious to put in a Miata. But the Miata engine in the Cadillac would be hilariouser. It almost always works.
Nissan RB26DETT in a Cobra replica. Paint it black, no sidepipes, put Nissan burger badges on it where you'd expect AC / snake roundels.

I have an SN95 mustang with a blown engine and I want to put everything but a ford engine in it instead. Even a 1.6 miata engine I have laying around.

I want to diesel swap everything. The most questionable thought recently was putting a Mercedes diesel into an e23 7 series. Although that doesn't sound that questionable when I write it down

6BT into a 60s or 70s Cadillac (OK, thats been done once or twice)
Syclone driveline swap including the AWD into an El Camino or Malibu
RWD Beretta or mid 90s 2 door Grand Prix (has been done as a pro-street, I would do as pro touring)
Rebody an Olds Cutlass convertible as a 90s Grand Prix
3.5 Ecoboost into a Fox mustang (probably done)
6.5 Turbo Diesel into a C3 Corvette
The Triumph TR8 used the Rover V8, which also appeared in Land Rovers, so why not follow that bloodline and swap in one of the current 550+ hp 5L Land Rover/Jaguar V8s?
I have a couple that are not realistic:
A Ford small block in a 40s Chevrolet.
A Cosworth DFV front mounted in the Datsun.
The one I really really want to do is a Cosworth BDA-BDG in my Datsun. The limiting factor is cost; while I could afford the motor I have a tough time with the concept of a 7-15K engine in a 7-9K car. This is really actually quite silly as most race Datsuns have 7-15K Datsun race engines in them.....just not mine.
Since the Escort GT had the 1.8 BP "Miata engine" I've thought about how to put the 80hp sohc from the base Escort into a Miata Lemons race car... as an attempt to get a Miata into C class.

Before we sold our Lemons Miata, our team had a serious discussion about swapping an Iron Duke into it to take "advantage" of the Iron Duke loophole: any Iron Duke powered vehicle is automatically Class C.
About 15 years ago, you could get a ratty 3800 Camaro/Firebird that runs well for $2500, and you could get a very nice G-body Regal or Cutlass with the 231 Buick engine for < $5000. I thought if you put the drivetrain from the F-body in the G-body, you get a nice daily driver that gets ~23 mpg around town and close to 30 on the highway. Seemed like considerably less work than an LS swap, since you're replacing a Buick 3.8 + 4sp auto with a Buick 3.8 + 4sp auto, and you already have the harness + computers from the F-body.
Now I realize you'd be much better off simply buying a well-preserved 1997-04 Regal GS. It's not RWD, but it does every other thing better than my hypothetical F/G-body.
I want to do the 3.3 ho Chrysler 300M engine into a Porsche 914. I also want to do a big turbo Atlas 4200 into a 54 Chevy LED sled. Lastly I keep trying to talk brother Dustin into a 3900 60° V6 swap into his stats
I'll admit to repeatedly measuring the Eurovan to see how much would have to be relocated for a RWD LS swap.
This place moves the Overton Window of swaps into a whole different universe.
I have unhealthy desire to put a turbo K-motor into the bed of a square body S10.
Fortunately I don't have the fab skills, or money to pay someone, to do something crazy like that.
I always thought it would be funny to install the big slant 4 from a rope drive Pontiac Tempest into a Chevette/T1000. LeMons theme "Tempest in a T-car"
It would be a real challenge to make that fit.
