For me, a modern body style, 2 door, 2wd Tahoe. Full size frame, V8 engine and the same towing capacity of my '14 single cab Sierra. If GM still made it (OK, and didn't stick it with luxury loaded options only), I'd have one in my driveway right now.
Kinda hoping if the new Bronco is popular that GM might actually do it, but since the Bronco isn't on a full size chassis, I'm not expecting it.
A modern Tahoe/Yukon is on my "when I win the lottery" bucket lists as in I'd pay some body shop to make me one.

Though I doubt my wife would want to drive it, what she needs is a mini-van that can tow 7,500 lbs of horse and trailer. That way she wouldn't have to be lifting the Irish Wolfhound's dead ass into the back of the Tahoe all the time.
Or, she needs to switch to a dog breed with more self loading capability...
A basic rear-drive hatchback with a manual, no electronic gizmos ( I really don't need an "infotainment system", bluetooth connectivity, heated seats, or traction control) available for under 15k new.

Maybe, my wife doesn't like the front ends on mazda's. Basically need it too look like an early 2000s era focus or saturn wagon. She's picky
Life would be pretty nice with a ND Miata coupe, a nice NB and the Toyota Tj concept vehicle, as long as it comes with a turbo or more than 2 liters.
I have never really dug Harley Davidson, as I'm not a cruiser guy, but if they made their Live wire electric bike, and it was priced reasonable, I buy one this second.

Have you considered something from Zero? I've been eyeing several of their bikes for a while now, but the price point/range aren't at a ratio that I like yet...

I'd settle for being able to buy the current sports cars ( focus RS, Toyota 86, Subaru impreza, etc) completely stripped out, no airbags, no interior, stand alone engine controls, with stand alone ABS/Traction control on full kill switches, no power anything, for a significant discount off the msrp. There would be a lot more modern racecars if those become a thing.
All I want is a wagon (not a hatchback or psuedowagon) with a manual, RWD, and preferably a NA V8.
I'll even take steelies and cloth seats to help keep costs down.
Sadly, it appears that only Europe and Australia get wagons that fit my wants/needs (BMW and Holden Commodore wagons) and I won't be able to import them until they're considered classics, which is a damn shame. My E61 will be a manual RWD w/ a V8 before that ever happens.
Edit: I'd even buy it new and I berkeleying hate buying new and taking that massive initial depreciation.

No. I think long term. I tend to keep things forever. Harley will be around if I need parts and support. Zero, I'm less sure of them existing in 20, 30, 40 years.

I don't get why Honda does not do this. I had an '86 CRX Si. My wife called it my go-cart. I really liked the hatch back for its utility. All Honda needs is an updated chassis and 200 hp. (oops, that is the BRZ).
I'd like a Dodge with the 3.6 with either the ZF 8 speed or a proper 6 speed, plop the drivetrain into a Crossfire sized car. "But Ross, they already did that with the Crossfire but with older tech." Yes, but it was stylized by Chrysler and not the more aggressive Dodge look. Plus the Pentastar is a sweetheart of an engine especially with that 8 speed. The 6 speed could be in the SRT version or something. Maybe tuck toddler seats in the back.
I'd also like a USDM version of the Aussie 4 door Falcon. Drop the Barra I-6 and slap in Ecoboosts. Only the top-super-secret-special edition would have a supercharged 5.0 V8. Manual transmissions on the fun versions. Based on the Mustang's chassis.
Lastly, a Ford with a FoSt drivetrain in the back of a Focus chassis reworked for a MidShip Runabout. Then have a Ford back spec race league.
My lowest hanging fruit would be a Focus RS type approved for a tow bar. The (fwd) Focus Wagon with the big diesel is approved for 1800 kg towing weight here in Europe - give the RS the same and I would have bought it. If was available as a wagon I would buy it even quicker. But I guess since I bought a fwd 1.5 EcoBoost instead they won't.
The sane part of me wants a Kuga/Escape plug-in hybrid with real awd, at least 1800 kg towing capacity and at least 50-60 km range on battery power.

I've always maintained that the 80s/90s produced the best looking cars. What if car companies would take their powerful and efficient new drivetrains and put them in spitting image replicas(none of this "retro" nonsense) of 80s and 90s cars. Give me a 5.0(or better 3.5TT) Fox Body Notch, an LS3 3rd Gen Camaro, an OM651 190D, an N20 318Ti and maybe a K24 EG Hatch or any other good looking 80s/90s car with modern tech.
I realize all these things probably exist and aren't too hard(except the BMW electronics). What would be nice though is modern engineering and safety and a factory warranty all wrapped up in a good looking package.
If BMW would make me a new 318Ti with an N20 I'd actually consider it. Don't let my current Porcupine hear me say that

I was pretty fired up about the lack of cheaper sporty wagons for a while. If the Golf R wagon was here I would have really tried to get my wife to buy it. We ended up going with the CX 5 because she wanted to stay with another Mazda but she really enjoyed the Alltrack. Since she was on the fence, mildly preferring the Mazda, and I wasn't super enthused about the wagon on stilts thing, I didn't push it that hard. In that vein, I think a Mazda6 wagon would have been a winner, especially with all-wheel drive. Basically we just needed a step up in size and interior capacity from the Mazda 3 hatch. So, Golf R Sportwagen and Mazda6 wagon.
When I replaced my Corvette with a family suitable car, I landed on the M3 sedan which has been awesome. If there was a compelling wagon in the class I would have been pretty interested. There's no M3 wagon made but that would be awesome. There are C63 wagons in Europe along with the recently released RS4 wagon which I would have given strong consideration.
I guess at the end of the day, we have a four-door sedan and a CUV in the garage, and if the right options were out there it would probably be two wagons.
For me: AWD turbo hot hatch that seats 4 tall torso people and has an interior which is more Audi than Subaru.
Oh, wait... they made the Golf R!
And I bought one.

This would be awesome. I have always said if I could daily a crew cab pickup that was over combined 25mpg I would happily do it as my all the time rig (full size) As long as it can tow 7500-8k I would buy new for that. Oh and it needs to not have a bunch of engine failures like the Ram eco diesel :(. I am surprised someone hasn't done a "volt" version of a truck since electric motors make so much torque
