Backspacing vs. offset. How does this work? Can one value be used to determine the other? Often I see one listed, but not both. Haven't been able to comprehend what I've read elsewhere.

Wheel offset is the distance from the wheel mounting surface (that contacts the hub) and the centerline of the wheel.
Backspace is the distance from the wheel mounting surface to the back lip of the wheel.
If you have two of the following, you can calculate the third: backspace, offset, wheel width. Just make sure you account for the thickness of the lip, as that's not part of the wheel width.
