Been looking for some 5x5 steel wheels as backups and so I can move some older cars out of storage. What happened to all the GM full size wheels. They made 10,000,000's of them and there is not a single set of 5.5 or 6 for sale that are clean anywhere.

They were all turned into 'jackstands' at the junkyard.
A while back when scrap prices were high they were going after every bit of steel they could get there hands on so most of those got crushed.

A friend of mine was recently lamenting how hard old small block Chevy exhaust manifolds are to find now that hes putting together something he wants to look original. "Do you know how many of those I threw away in the 80s and now I have to pay through the nose". I think wheels suffered the same fate.

I'm probably stating the obvious here but have you tried a salvage yard on the bad side of town? I would think they'd have piles of old B body wheels.
I have a couple sets of old Pontiac steel wheels in my garage attic with a 5 x 5 bolt pattern. Unfortunately they're the old 14" type from 1961-1964, and they're a long ways away from you.

i have a set of stock manifolds off a 74 Monte Carlo, i guess i should hold onto them so i can actually retire some day... and i sold a set of 15X8 steel "rally" wheels with the 5X5 bolt pattern from an 80's pickup for $50 last fall, and that was with 2 extra trim rings and all 4 center caps..
I've been having the same issue with 4x100 lately. Just basic berkeleying wheels have been almost impossible to find. They were only on pretty much every non-gm 4 cylinder since forever, but it took begging on craiglist and way more money than it should have to finally land a set. Still sitting in the way needing tires, but I don't think I can ever let them go now.

Mazda2, Fit, Yaris.
I've been half-assedly trying to sell my Mazda2 steel wheels (4x100, 15x6, et45) with hub caps and great condition Continental snow tires(all 7 to 8/32) for $300. With OE Mazda TPMS sensors. You can easily sell the tires and sensors and recoup most if not all of that if you just want the wheels. I just don't have the time to separate everything and sell it all.

Really? I have piles of them. Just sold a set of BMW bottlecaps for $50 a couple months ago to get them out of the way.

Funny you mention those, my one friend is selling a Golf with those wheels I'm thinking about trading the Steel ones for. My issue though is they're still 14 inch. I'm not particularly happy that the steelies I have are 14x6.5 but since the Paco lift is on hold, I'm just holding onto them.
For most of last fall, until about 2 weeks ago, any non aftermarket 4x100 was impossible to find in my neck of the woods. Now they're starting to show up again, I'm starting to think everyone bought them up for snow tires.
