My list keeps changing. I have Il Monstro, and just sold the Monza, as it was too small and too nice for me.

The V65 Sabre with the Hondaline fairing is a keeper, as is my 650 Seca and a KTM 620RXC, believe it or not. Several other semi-odd 70s-early 80s JapBikes in the keeper pile, as well, including a XV920R and an FT500.
Looking for an ATK, an RZ350 (that I also would be too big for, but I am still kicking myself about a bumblebee I missed out on a couple years ago), a Guzzi Ambo, and probably an SRX6
FT500 is the single and VT500 is the shaft-drive twin, right? IIRC, both had factory tracker-esque styling.
I do like that Monster...the yellow looks great!
As for bikes being too small...I am 6'2" and my Goose 350 sort-of fits for a short ride, yet I still love it! Don't let a slightly heftier build keep you from the nimble corner carvers...nobody says you have to ride it all day!
And Cooter and I have similar tastes in bikes...
I wanted an old Honda 4cyl as well so check this off the list

I had a soft spot (hard spot?) for a Bimota Mantra for years. One turned up at a local shop for $23,000 which is stupid money. It stayed in the area for 20 years and finally came up for sale at around $8,000.
Maybe I've grown out of it.
I'd love to have another laeger protrax 250r quad, and it'd be cool to have a collection of old two stroke sport quads, quadzillas, banshees, quadracers, etc. too.
I have always had a thing for a ATC250R.
I had a ATC70 and a XR80 as a kid -
I also have a thing for a OW01 - a 1989 FZR600 was my first street bike
If I had the money, I would have a hard time deciding between a red and white or a blue R7
Bimota's are neat as hell, no bucket list would be complete without an MV Agusta though. I'll probably end up with a used 312R or a new F3 800 in the next few years, just depends on my tastes at that point.

Probably not due to finances, eventually perhaps. I'd really like to import a zx2r though due to the noises they make.

Yea, I already own one bucket list bike for sure, being a 1 of 3 built is pretty exclusive.

as a kid, I had two of those ATC70s. My fathers pipe fitting company did a big job at a Canadian refinery and they bought a dozen of them to get around the site. when the project was over, he kept two for me and my brother. They had a cool flame sticker kit on the tank. I looked at getting one for the fun of it and cant believe how much they sell for in good shape.
I remember hating the pull start because it always broke, but as a 10 year old, it was fun to work on.
I broke a rear hub jumping a 10 foot dirt pile (in my memory it was at least 10 foot tall but in real life it was probably 3 foot tall).

CX-500 is one of my favorite looking bikes ever. Looks good in plain, touring or cafe racer mode.
I had this poster on my wall as a kid, and I still want an old-school V-MAX. I don't care if it corners well, neither do I.
And of course these guys were my heros...
I guess I don't have exotic tastes, but one day I want to own a GSX-R750. Not even a new one, probably one from about 2004 or so.
Which is kinda funny since my current ride is an S-model Ducati with the Ohlins this, Brembo that and carbon fibre those. Not mine, but pretty much this (almost exactly like Cooter and Octavious' bikes):
