Can this be done? and work well?
I don't know specifically about GM headunits, but usually you can hook up an extra amp via a line level converter that gets hooked up to the head units amp output.
Depending on the availability of speaker connectors on the H/U you might have to run speakers and sub off the amp instead just a sub.
Why not get a complete system from a GM that had a sub stock? Also, plenty of aftermarket amps have an input that taps into the stock speaker wires for a signal when the head unit doesn't have any spare outputs.

I'm a cheap-ass and don't feel like ripping the dash apart....that and I don't know if another would work with the steering wheel controls
Dunno about the modern ones but I make the mistake of trying this on an 89 vintage back when it was new. It promptly blew up the headunit. One of my buddies with more knowledge about such stuff said there was something odd with the GM headunits that caused this.
How do you suppose you can add an amp and sub without taking the dash apart??? At the very least, you'll need to just to get at the wiring.

I can access the wiring harness from the passenger foot well, and the rear seat removes for the battery are rear wiring.
I'm not knowledgable with car audio to know if I can tap in the rear lines or not for an Amp. or would my best bet be to replace the stock premium sound with aftermarket?
Not looking to be heard 2 block away, just more than what GM provided me
I also don't want an Aftermarket look. the car is parked in public all day long
I used to have a GTI (mkIV) that I used JBL amps that had speaker level inputs. Tapped in right by the rear factory speakers. It worked and sounded good. I wanted to keep the stock radio as VW used the bitchin' red and purple lights. I never had to pull the radio to install that system.
If I was to do it again I would look for a amp with line level inputs and a remote bass control to adjust the amp level. This is a little knob that can be installed somewhere within reach, but out of sight. Otherwise the only way to adjust the amp output is with your radios fader control, which will also increase/decrease the rear speaker level at the same time.
