Is there something like mapquest or google maps that can tell me how to get some where using back roads? Or letting me pick where i want to use them with out using a paper map?

I think that your best bet would be to google maps or mapquest, and somewhere on there there is a little button to check "avoid highways" or interstates or tolls or something like that. I think that on google you have to click "show more options".

Also, on both of them you can drag the route with your mouse. For instance, lets say that I want to go from Chattanooga to Charlotte, but I really want to go via Deals Gap. Obviously, the easiest thing is to add a stop on the route, but you can also drag the highlighted route on the map to that point in the road, and it will redo the directions to include that.

It does depend a bit on what you mean by backroads.

As mentioned, you can set the various sites and softwares to avoid toll roads, avoid interstates, etc. But if you want one to specifically guide you onto dirt roads and fire trails, I don't know of any that do that.

The closest is asking some of them to give you a straightest route. If I ask my DeLorme Topo to do that, it will shoot me down fire trails, farm paths, and every other obscure route it can find.

There are a few ways... There is a version of Delorme that lets you specifically choose the roads you want to drive on. I'm hoping to pick up this program in the near future... I currently use MS Streets and place a ton of way-points in order to force it to take the roads I want.

Another little trick I discovered is the use Google maps and choose the "walking" option. That will give a fairly direct, non-highway, back-roads route.
