I can sleep when I am dead. 
THe concrete glue is finally supposed to come in today, and I can restart the backyard/frontyard project and get it done before spring break. All my sunroom glass gets delivered on 3/27. So I need to finish it all by then :)

Concrete board for the roof? Not dry wall?

Concrete board with liquid membrane (on the top side toward the roof?) should not absorb water.
Never have done stucco overhead, but concrete board with a stucco face seems like it would be fairly bulletproof in your situation.

it rains 7 days a year here. I was going to go with drywall X that's for moisture

Finished the backsplash today
Well, you are in a slightly different rain situation than we are at the other end of Cali. We get 80''+ of rain a year and ~125 days with measurable precipitation....

Thank you! I have lived in boston, seattle, and rainy parts of CA (redwood). I have had it with the rain
adding gas line today for pool heater. Heater will be here Tuesday. Will finish digging my tench today
I don't know much about this stuff, but your main gas line needs to be sized for the demand you could put on it. Adding a pool heater could put a huge demand on the line and require a larger supply line.
Any reason you didn't run the backsplash over the entire wall between the cabinets and the counter?

Good morning neighbor,
The house had a pool heater before. That gas line runs from gas meter, side of house, to underneath the house. Line is about 35 years old. It isn't holding pressure. Thus I cut the line on the side of the house, and now running new line underneath the house (crawl space). Instead of digging up the bacyard (where old gas line runs), I am running it form crawl space, to under the planter (soil) straight to the shed where the heater will be. Pool heater, 400,000 BTU, requires 1.5 inch gas line. Previous line was 1.25.
The house came wiht the narrow backsplash as you see.
If you are talking about (above stove) why I didn't go ALL the way, it is due to, that is where new stainless high powered hood will be. Behind the stove, there was nothing, so it looks silly. I completed the area behind the stove, since all new appliances coming in 2 weeks, and it gave me a chance to take the hood off, and do that part of the backsplash while I did the painting.
If you are talking about the narrow band to the right and left of hte stove, that is how the house came. THe rest of the backsplash as you suggested is in the boxes in the kitchen, I just haven't gotten to that part yet. :)
I hope to finish up the backyard projects in a week, so inside backsplash now will be on hold.
Due to coronavirus, we are thinking of cancelling our Egypt trip for spring break. If that happens, I will have another 10 days to work at home, which should complete my sunroom project faster (just waiting on supplies - 3 6 foot sliding doors).

again rain for 8 days. So no more progress till then
spring break trip for Egypt cancelled. Will have time to work - but weather not cooperating
