The Alton Brown way

 

I did it once. I now buy corned beef brisket when I want corned beef.

Yeah, as far as I know the only way to get good corned beef from a plain brisket is to brine it for several days, then cook it slow and low (slow cooker is great for this) fat side up for several hours with very little liquid.  IE, the Alton Brown way.

Yup, takes quite a while to brine the brisket for corned beef. Like a week.

I'd smoke it, no more than 200 degrees, for several hours wrapping it in foil when it gets to 160 degrees then back in till it hits 190.

Mmmmm. brisket.

We cheated and bought a corned beef brisket from Sams. Usually we boil it all day, but this time we are using our Instant Pot knockoff and power pressure cooking it in an afternoon.

As far as brining it, never tried it myself.  Always pre-brined.

Oddly enough we're trying it the Alton Brown way this year (first timers.  We usually buy pre-brined).  If I post sometime after the 17th, then we all didn't die of food poisoning.

I wasn't aware that stores sold uncooked, pre-brined brisket to make corned beef with.  I figured I would just do a brisket with some corned beef seasoning tossed in, crock pot it, and call it good.  I might have to stop at the store this evening...

I worked in QA in a pork plant years ago and when it was slow in the summer they made corn beef. It was injected and packaged with its own cooking spices. Every run we brought one into the lab for taste testing. Threw it in pot with water and the spices and Boy that was good. I completely forgot about it until this thread. I don’t know who makes them now but I wish I did.

I'm alive!

The Alton Brown recipe didn't kill anyone in our house but I didn't buy the leanest cut of beef.  Note to self for next year.    Other than one pocket of fat that turned into gooey slime in my mouth, the recipe was a winner (and not deadly).

During our car club dinner on Friday, my ex- was raving about a corned beef recipe she tried.  Uses a crock-pot and said it's very easy and delicious. I'll see if I can get it from her.

This morning, I had an inkling of an idea that, like most good ideas (as well as most bad ones) starts out as a heresy.

 

What would happen if you make meatloaf... out of corned beef?

 

Sliced meatloaf on bread with sriracha is one of my favorite breakfast foods.  I think upgrading that to corned beef and horseradish (keep the sriracha) would be even better-er.

 

Disclaimer:  I had two corned beef and sriracha sandwiches for breakfast.  I think it needs to be more meatloaf-y to work.

I bought the brisket before looking at the recipes. A just slow cooked the brisket with some seasonings. Oh well. I will probably skip the prep work and buy a pre brined one next year.
