Well now i can get a chimney that works with my side burner for all the fast starting.

used weber kettle, $70ish for cast iron replacement grates from amazon, $15-20ish for replacement vents. get a chimney starter and enjoy.

If you want to have real fun media blast the powdercoated finish and apply 5-6 thin coats of porcelain paint to the inside and outside. Then you'll have made a budget BGE/Komodo Joe for less then $200, mine will hold 200 degrees for 13 hours at a time without adding coals.

Hahah i saw stuff like that. Way beyond my level of serious right now.

Will probably invest in that sort of thing when my life slows down, i don't work so much, and the fleet has stabilized.

A close friend has a setup that he can adjust from his phone, he has good results with it, but it ruins the feel of bbq'ing to me as it makes it digital and about numbers opposed to visceral and about feel. He basically Dual-clutch transmission-ed BBQ.

That being said he can smoke meat while at work and does so about 4 days a week opposed to making it a weekend only thing, and he spends his weekends on the boat or out of the cabin opposed to going back and forth to the smoker every 30-45 minutes to check on it, so I do "get it". He actually smokes the pork belly for our bacon on the digital setup as we're moving over 40lb a week.

I like that porcelain paint idea. Do you find that you can still use it like a regular charcoal grill when you arent smoking all the things?

I might have to do this to my weber...

yes, it can still be used as a regular grill, it just takes much longer to cool down. I tend to use it as a regular grill doing steak, chicken or burgers then drop in the wood box, slid coals onto and around it and toss a brisket, pork belly or shoulder on it to smoke after grilling. brisket and eggs for breakfast with be the death of me.
