Parmesan chicken

1 Chicken breast per person (boneless skinless)

2 eggs per breast

bread crumbs

jar of spaghetti sauce

shredded Parmesan cheese

Pre-heat oven 375

Dip chicken breast in a bowl with egg (beaten), then roll the breast in bread crumbs. Place the breast in an oven safe dish of your choice (I use glass) and cover with foil. cook for about 40 minutes or until just done. Remove foil, and pour desired amount of spaghetti sauce on top of each breast (about 4-7 tbsp per breast) and top with shredded parm cheese.

With the cover still off, put them back in the oven until cheese melts and serve. Goes good with spuds or rice and a vegi of your choice. Given the time constraints I'd work the vegi/starch while the breasts were cookin.

I did brunch for dinner last night

Sweet potato hash - couple sweet potatoes, peeled and cubed, one large-ish onion, garlic, salt, pepper, rosemary and thyme

Brown potatoes first in some olive oil, then add the onions, then garlic, spices.

Top with an egg, over easy. Bonus points if you have backyard chickens like we do.

It's not the most fancy thing ever, but you can dress it up nicely, and it's quick, good, and pretty hearty. Goes well with red wine too. Leftovers are good for breakfast tomorrow.

hm... yeah, I need to adjust my spicy scale (I loves my sriracha)

Bake some ckicken wings (but what sauces would she like...?)

Go fancy and do some cornish hens? Slather with orange marmilade and stuff with some herbage? (or do a sausage/stuffing stuff?)

But I think I got one. It's just time that's tough with this one:

Get your choice of beef (eye of round roast works) and cut it as thin as possible. You're shooting for bite sized paper thin pieces here.

In a bowl mix:

1/2 cup soy sauce (I use kikoman)

1/4 cup water

1/8 cup vegetable oil

dash of sesame oil if you have it, but not required.

put sliced beef in bowl and let it sit for about 15 minutes.

In a sauce pan cook the beef, laying it flat (so dont just tip the bowl into the pan. your going for a cook-flip-cook here). medium-high heat works.

When you've got all the beef done pour all the liquid in the bowel into the sauce pan and boil real quick on a high heat. Use this sauce to pour over rice. Goes good with broccoli

Another idea, that I already posted, but a different variation:

Steak Tacos. 2 corn tortillas per taco, melted chihuahua cheese between them. Skirt steak, cut into small pieces, cook in a skillet with some olive oil or butter. Throw them on the tortillas, put whatever of the following you want on them:
Avacado
Cilantro
Onion
Lettuce
Tomato (for you)
Jalapeno (for you)
Whatever else

Trying to avoid beef in general - we had filet last time for another failed-date-turned-good-in-date. It was great filet, though. Amazing.

She's not a fan of sushi.

Neat idea about Cornish hens. Let me think.

This, but instead of spicy, do a soy/maple/orange glaze. mix at ~ 3 parts soy to 1 part each of the maple and OJ. let the salmon marinate in it from when you get home till kids are done. then bake the salmon and reduce the marinade to a glaze in a no-stick pot. drop baked salmon on rice w/ some veggies under/around, drizzle glaze over top and sprinkle w/ sesame seeds. easy, quick and delish.

alternative: baked white fish w/ parm crust

tilapia is cheap, decent and cooks fast so a good bet here. make a batter of mayo, a bit of olive oil, and an egg. make a bread mix of panko, Parmesan, and some fennel/whatever other bit of green leaf seasoning. dip, bread, bake. spread over rice and add a dash of lemon.

This might sound so stupidly simple but it works. Get those cups of Annie's Instant Mac and Cheese. Get some chicken, bacon (whatever else you desire) off the salad bar. Make the mac and cheese in the microwave and then add the chicken/bacon/whatever else you get off the salad bar. Now you have gourmet mac and cheese.

Shrimp scampi is one of my go-to easy/quick date meals. Would go much better with white wine, but I'm hardly a snob for that kinda stuff either.

Peal/devein the shrimp, heat some butter and olive oil in a skillet, add the shrimp along with liberal amounts of garlic, and juice from a lemon. Toss with a thin spaghetti or angel hair pasta and lots of Parmesan. Bam, done. Maybe 15 min of prep time, 10 minutes of cook time and it will be delicious.

I couldn't live without pasta, it's the staple of my diet. No low carb BS for me

Ok easy button is get one of those pre cooked small chickens they do at most stores. remove from the plastic pan and Cover in metal pan / pot. Make sure you por in all the liquid and add water till you have about 1/4 inch on the bottom. Put in the oven to keep warm (make sure there is some water in the bottom of the pan at all times).

Make rice or get a bag-get and slice it up and cover loosely with a clean towel so you can put it in the microwave for 15-20 seconds just before serving. Add some sort of veg's like steamed broccoli with a little butter or better yet the green giant has these steamed packs of mixed veg's in sauce that microwaves to perfection in 3 min or so. Add a salad and you are done.

Baked whitefish with some sautéed veggies.

Take a whole filet of your favorite white fish, I usually prefer haddock but you can use almost anything with a decent sized filet. Wash it off, put it skin side (or the side that would have skin) down on a cookie sheet with tin foil lining. Put salt and pepper on the fish, then a light coating of mayonnaise. Then break up some ritz crackers and cover the fish with them, topped with a few bits of butter. Bake at 375 until fish is flaky.

Cut up some zucchini, onions, mushrooms, sauté in olive oil with salt pepper and garlic powder, all done while the fish is baking.

Really big and really awesome crab legs take just minutes to heat (they are already cooked before frozen.) Add something green like the asparagus you already mentioned and a crusty loaf (the type you heat at home.)
