Ok.  I've been suckered into being in denver over the holidays.

 

What's fun and not over the top touristy to do?

 

Craft beer is a plus

You'd have to make a 300 mile trip over two 10,000' passes to pick it up if I did!

 

If you have a significant other with you, book afternoon tea at the Brown Palace. Do it NOW. She will love it. Or he, I don't judge. Also, christmas lights at the botanical gardens.

One of my best buddies runs the Denver microbrew tour. They have a couple different routes. I strongly recommend them.

Good ideas so far. There's lots of cool stuff to see in Colorado in winter. I have no helpful suggestions. I like Colorado. Haven't been there in 20 years.

More microbrewery's here than you'll know what to do with.  Unless you plan on drinking from dawn till dusk everyday you won't even scratch the surface.

There's a really cool WW2 Aircraft museum in Colorado Springs.  The Zoo down there is also really cool, you can feed giraffes. 

Hmm, most of my activities in Denver center around little kids, so that might not help you very much.  In the winter I'm usually skiing, although there usually isn't any real snow around the holidays...

The Shelby American Collection is in the area. Great visit if you like old race cars and chicken farmers.

Hit up Zoo Lights.  It's like a 3 for 1: animals, beer/booze, and lights.

+1 on the Shelby American Collection in Boulder.  IIRC, they are only open on Saturdays.  Interestingly, IIRC the cul-de-sac they are on is called Chaparral Court.

Ages and interests?  Kids?  Active outdoorsy types or less so?

The Cheyenne Mtn Zoo in Colorado Springs is indeed very cool, though the Denver Zoo is neat too.

There's a mining museum in CO-Springs that has a huge running steam engine.

Hiking in the foothills is terrific in winter time, though sometimes the trails are snowed in.  We've not gotten a ton of snow in town the last few years.

Seeing Red Rocks Amphitheatre is super cool.  If you're an athletic type, run the stairs there on a weekend morning.  We do 5 sets of the North stairs - from the road to top!

The Forney Museum of Transportation in Golden has a great selection of old cars and trains.  And you could go to the Coors Water Treatment Plant too.....  I mean the Coors Brewery.  I always get those mixed up.

The Wings over the Rockies museum at Lowry has a lot of great aircraft and space stuff.

There are good microbreweries all over the Front Range.  If you give an indication of what part of town you'll be in,  I can offer further recommendations.

Well, One of those is within walking distance of my house. (The mining Museum) 

I never knew about the Shelby Museum. Kind of funny it's in Boulder. :) I'll have to go there the next time I'm in boulder seeing friends. 

 

Not much more to add. Just learning my way around as well. If you like to MTB, There are a ton of fun trails around to ride.

The Colorado Railroad Museum in Golden is also very interesting if you are a narrow gauge (3 feet between the rails) fan.  They hve threee of the Rio Grande Southern Galloping Geese.
