That looks good but I don't think they sell bologna rings in the south. Might sub in sausage.

We make a breakfast casserole probably 1-2 times a month, I can't find the recipe right now but the gist of it is:
grease 8x8 pyrex pan (you can double the recipe for the larger rectangular pan)
Brown 1lb breakfast sausage, drain some or all of the grease depending on your preference, and set aside in a large bowl.
add 14oz by weight of hash browns (we try to get the fresh/refrigerated hash browns, if you have to use frozen, par-cook them to defrost and get rid of some moisture before using or they won't cook enough) to the bowl, along with 1 cup and change of shredded cheese (dealer's choice, but we usually use the "mexican" blend) and mix together
add the mixture to your baking dish
crack 3 eggs and 3/4 to 1 cup of milk or heavy cream into a container and whisk, salt and pepper to taste, and pour over the sausage/cheese/hash brown mixture, and cook for 60 minutes at 375 or until sufficiently cooked and the casserole is to desired "doneness"

I had never had it (or heard of it really) then after I bought one I found it in several grocery stores. I think it would work with kielbasa. The ring bologna was a lot like a summer sausage to me.
