One of the best Beatle-covers I've heard was by a bar-band named Bullitthead; they had a jazzy/blues rendition of Eleanor Rigby. I only saw them play it a couple of times, but years later, I still remember it as awesome.
The guitarist's name is Ron Norris, who apparently now plays the Jacksonville/St Augustine areas. Check him out if you're interested.
Yes performed an outstanding cover of "Every Little Thing" on their first album. Sorry kids and Yes fans, but I couldn't find any link to a video of their original recording, but there is some recent crap from the band that doesn't deserve due respect or linking.
Find a copy of Yes' first album/CD (it's self-titled) and enjoy some early prog-rock, circa 1969.
If we're focusing upon Beatles covers, I'll post up Billy Preston's version of "I've Got a Feeling".
