There are a couple of commercial cameras coming out soon that will let you do this on a mere mortal's budget. Think I might go for one of those instead of upgrading my GoPro...although they'll probably make one soon if they know what's good for them.

Ultra-hi-res camera that shoots into a big spherical lens, seeing all around it at once + software (to pick out the part you want to look at).

Wait, the description with the video itself says there are 6 high def rigs used to give 360 degree coverage.
Yeah some use multiple sensors or even multiple lenses...software stitches the video together for those. I didn't look into how this particular rig works.
You can see the "seams" if you look towards the back of the car, right behind the Mercedes logo.. It's pretty awesome tech, though!
