I've only driven one motor home at freeway speeds, but that was enough to convince me that many RV construction techniques are inadequate for normal highway speeds. I'd want an RV built for high speed to have its cabinets built on a welded steel or aluminum frame instead of using cheap particle board cabinets and in general to be built a lot more sturdier.
I'd also want to keep it typical van size or smaller. Hmmm... takign a Dajiban type build, only starting with a high top conversion van and putting a shower and mattress in it, sounds like it might fit the bill.
This one is nuts. It did 122.156mph last year at Bonneville before the transaxle got explodey. It runs a 502BBC huffing nitrous with a Toronado transaxle. It's planning on going back this year for a run at the record.

My "RV" is pretty quick, but I do think it has the aero to do 100+, Factory limited to 86.... But it gets moving pretty quick once boost builds.
You'll have to go deep into the 140s if you want the Guinness world record.

Push a Class A to 140mph, then I'll be impressed.
The Vixen probably holds the title as the most fuel efficient, but lately I've wondered why? Is it just because of the diesel motor? Or did the aero of the thing help as well?
