I will reiterate what Toyman said above. Most hot new brewpubs and restaurants around these parts are a group effort.
I've got this pipe dream of opening a combo cafe/bikeshop/brewpub. I think if my best bud golfduke (very talented brewer) and I lived in the same state, it would happen. We'd have to figure out how to keep the hipster quotient in check, though.
I'm a good wrench on a bike, have worked chemical manufacturing (though not brewing), and am excellent with the public for hosting, leading tours, customer service, etc. And I can bartend. I'd love to help run the public-facing side of the endeavor.

I know of a guy who started out with a homebrew/bikeshop, but decided he needed to just focus on brewing. He ended up doing pretty well for himself.
I wish I had a suitable skill for this sort of undertaking. I've been feeling the need for a change of scenery and have always been drawn to the PNW. A group effort GRMer staffed company would be a beautiful thing.
Maybe I don't know enough about brewpubs but, I don't see a need for a full time machinist on staff. It would be cheaper and easier to farm the work out to a local shop on an as-needed basis. I've never wrenched on a bike beyond tire changes and a basic tune up either.
Maybe I could be a maintenance consultant!

There is a shocking amount of mechanicing and fabrication needed in a brewery. In addition to qa/inventory control/bottling, i fixed trucks, fixed our canning machine, rebuilt/fabricated multiple items for boh use. It happens.
