[backstory that you really don't care about] We lost power for about 12 hours a few weeks ago. The weather was such that it didn't matter that the HVAC system didn't work, so we just enjoyed the time as a family. Then we got the kids to bed and my wife and I were talking and playing rummy by candle light on the living room floor. It was fun. So, I decided to make one night a week with no tv or computer. We enjoyed the time just talking and not getting caught up in housework or tv (usually the former, not so much the latter). So, Wednesday nights we have been playing cards. Most card games are ok for two, but much better with more than 2. Tonight we're going to play Jenga, that'll be fun. We could also go for a short walk in the neighborhood on nice nights.
So, besides 'hide the sausage' or something, what kind of games do you recommend for a couple to play?
Stratego is good. Rummycube also good. Oh, and I found chocolate battleships at TJ Maxx a couple weeks ago. What's more fun than being able to say, "I ate your battleship!"?

More seriously, Pictionary and Taboo are always fun, and by playing as a couple you'll make yourselves into a killer team when you play against others.
Troll option: Monopoly and Mario Kart
Mario cart is the berkeleying best! But that involves a TV.

One cool game my fiance got me was a Monopoly where you customize the game board to be stuff from life. It is pretty awesome gift!
Not a board game, but a couple years ago we got a ping-pong table and it is the heat! We have a lot of fun with it.

Dominoes are usually a bit of fun, (but again more fun with more than two)
Cribbage is a good two player game.
Yahtzee and Mancala are a couple others we play.

Backgammon: only for 2 players, easy to play, but a game you can spend a long time mastering.

I think everyone could. Which is why the OP made a point of saying he didn't want a bunch of "hide the sausage" suggestions.

dice game, Farkle. Is easy enough for our 7 year old to be able to play and enjoy it. Fun enough to keep adults interested. It's our 'go to' game right now.
The wife and I like to play Cribbage, Trivial Pursuit, Scrabble, Bezzerwizzer (it's a Danish-invented trivia game but the one they sell in stores has American sourced questions), and for some masochistic reason she keeps wanting to play Monopoly even though it's usually an absolute crush-fest that ends with her whimpering that I won't sell her property to complete any sets. (Seriously, ahead of time she says, "this is probably a bad idea, but .. let's play Monopoly!") So don't play Monopoly, it's a bad couples game. It's good for people that don't like each other to play.

Balderscrabble. It's a combination of Balderdash and Scrabble. Basically, you can lay down any "word" you want - but you have to provide a definition. Much more fun than traditional Scrabble.
I used to play a game called Pente, which I think could probably be characterized as "Go Lite". I was threatening to bring it along the next time we go camping.
Rummikub is indeed awesome. If you're doing it right, it will make your brain hurt.
We occassionally do Ebonics Scrabble when we have friends over. You have to be able to use the word in a convincing and funny sentence. Proper grammar is discouraged, though you get double points if the word is actually a word, but is used in an ebonic fashion, for instance, "Kona:"
"Bwah, go sitcho punkass down in duh Kona."
Monopoly is no longer allowed per the Queen's rule.
