Give Go a try.
Easy to learn, difficult to master and there is a worldwide online community to help you out.
This Go, not the others that google pops up
"Games may also be won by resignation."
I resigned reading the rules once I read that.

Risk.
...has also been banned in our house. There is a REALLY good version (the first one) for PS1 or 2 that is totally addictive.
http://boardgamegeek.com/boardgame/50/lost-cities Lost Cities is awesome, and nice because each "hand" takes 15 minutes or less, and you can just play multiple times.
http://boardgamegeek.com/boardgame/9209/ticket-to-ride This is fun too, just takes a bit longer (at least an hour or two). This also can be fun with multiple people.
Risk sucks for 2. Apples to Apples is great, but once again 3 person minimum.
Thanks guys and girl(s?). It's gonna be fun.
I like the outcome of this no electronics night. Heck, I actually thought about killing the main breaker in the house to get the cool 'no power' ambiance.....but I don't want to have to reset all the digi clocks in the house.
Chess and checkers if you are into strategy games. To make checkers more interesting play with 'must jump' rules.

When I was a kid and used to spend Summers at my grand parents' I fondly remember playing canasta with my grandmother. Apparently it can be played with more than 2 players, but 2 always seemed better to me.
I'm jealous that you can play games with your other half. When my g/f and I play any sort of game, everything is fine as long as she's winning. As soon as she loses, she doesn't want to play.
I don't know why but I have grown to hate board games. But I was a pretty good yahztee player.
If you guys are the creative type, "who's line is it anyway". Basically, start a story and stop at a crucial point and allow the other to finish it.
Learn to do something new together......carving, sculpting, painting, drawing.
I play hide and seek... when she is counting I leave and go to a bar.
I am totally going to start playing Ebonics Scrabble.

X2 - although I like playing Aggravation with the kids. Yahztee is good too.
My wife and I started to do this with chess.. we would play it all the time instead of tv.. i kept losing so i tossed the board but may try another game..
I play in a board game group every saturday night here are some we like that work for two.

Patent pending, patent pending, patent pending.
You will quickly figure out that there are very few people who "get it." But when you get two or three other people who do, it's pretty rad. Leave the board out and try to decipher the words sober the next morning.
Fluxx is my favorite. It's best with more people, but it's still a lot of fun with two. There are a lot of expansions that you can buy to make the ruleset even more complex, but the starting deck is great on its own.
Othello, Blokus, Boggle, all games SWMBO and I play on occasion as well as several you all mentioned earlier.
At the hunting camp at Keaton beach florida we have no cell phones or cable. We play round after round of Skip bo and have a blast . Its weird getting off the grid recharges the batteries ,
I second the Rummycube suggestion. Although more fun with 3-4 but playable with 2.

Think of it like chess, where it becomes so clear that you're getting your ass handed to you that you and you want to move onto a new game.
When I was learning how to play Go against somebody much better than I was, I resigned a lot of games, but I also learned a lot.

We like Trivial Pursuit with the original board. The nice thing is that there are card sets for all ages, so you can use the youngsters version for the kiddos and the more challenging questions for the adults.
Wednesday night knife fights?

Knowing Ebonics is part of my job. That would be way too easy for me.
