I've used ground beef to make stuffed grape leaves or stuffed peppers before. The grape leaves take a lot of prep time but are worth it for special occasions. Stuffed peppers are a bit quicker to make.
I've made this stir fry with ground hamburger but I think turkey would work as well. Basically I throw a pound of ground meat into my wok with a little cooking oil Get it probably 90% done. Then I add a bag of cole slaw mix, the cabbage and carrots stuff. Add in diced onion and garlic. A little salt. A teaspoon or more of lime juice. Some hot sauce. Soy sauce. Chopped broccoli sometimes. Sometimes mushrooms. Diced celery. Serve with rice. The one thing to remember is that you can't really remove oil, only add it, so take it slow with that stuff. I'll use 80/20 burger for this.

Surprised I haven't seen cabbage rolls mentioned. Incredible if they are done right. I haven't made a Salisbury steak in a long time. Have to do that soon. With fries and gravy of course.

Make your hamburger patties 1/4 lb, couple dashes of soy sauce each, Fiesta brand Hamburger Deluxe seasoning when it's on the grill and you don't have to be tired of hamburgers any more.
