several-years-old Mazda6? even the 220hp V6s can be had pretty cheap now, they are a lot of fun to drive, and should meet the mileage requirements.

does not push the "better for highway driving" button. the Protege was so much fun in part b/c of its short-ass gearing (as in ~4000rpm at 80mph, and that engine isn't the smoothest, either).

the focus is a LOT more relaxed on the highway. i drove my sister's ZX3 from Florida to NJ, and it was a revelation. the 3 is a lot better than the Protege in that department.

Mazda Milenia S? (no idea about mileage) Mitsubishi Diamante? Nissan Maxima?

Oh get serious, you want an Accord. 4cyl with a manual. This is what that car was made for. You will have to accept 90,000 miles on the ODO or so, but with some nice rims you got exactly what you are looking for.
