So I am redoing a small room on our house. It had some thin wood paneling instead of the sheet rock. The room had water damage so I ripped out the wood paneling and put sheet rock in. But now the sockets are seriously recessed and the covers dont really fit. Is there some easy way around this?
Mount the switch on your new substrate.

Take a lot of physics classes, invent a time machine, then go back in time and move the boxes out before you install the sheetrock?

I've used these spacers to get the outlets flush to the wall. Just keep stacking them until the height is what you need.
Another vote for the stackable outlet spacers. They're magic.
Do your outlets still have the little ears on them? You can bump those onto the surface of the drywall and you will be all good.
If your outlets are missing the years then box extensions as mentioned are the ticket.
