Any educated guesses on the weight of a set of concrete stairs, about 6' wide...

If you can't tell from the photo, it has slid down about 3 inches. I want to jack it up and slide it back into place, then build supports under it (block and mortar) Instead of the lumber and pile of dirt that was under there.

According to the Internets concrete is 145lbs/ft^3.

I would conservatively guesstimate each step at 6 cubic ft, so you have 30 cubic ft of roughly concrete material, so it will weigh something like 4350ish lbs. So your gonna need to respect that mass if you attempt to move it.

You get us more accurate dimensions and we can get you a more accurate estimate.

Would it be insane to use a few bottle jacks and just pump concrete underneath it, sacrificing the jacks in the process? My guess is that the stairs will be unsupported by the wall when it is jacked vertically.

Mmm, no more than a ton, rough guess based on bricks. Type of brick creates tremendous variability.

No problem with jacking it as you propose. I'd use two jacks, one on each side. Slip a 4x4 across and you can keep the jacks themselves out from under there, having them just to the outside. Makes stacking block and such inside the space easier. Then ram in concrete or mortar to your hearts content.

Looking at the picture, you've a number of other issues with that building that you would be wise to address before making the stairs a massive blob of cement and block.

Does the concrete pad on the left side of the stairs continue under to the other side? Is it deep, like part of the foundation or is it shallow like a sidewalk?

No point in doing all this work if it's going to sink anyway. Do some homework and don'y lay under it!!

But you knew that....
