Ever type out a whole bunch of stuff only to discover you inadvertently hit the cap lock key? Is there a way to fix all those caps with a couple of key strokes, or do I just erase it all and start over?

Depends on the program used for typing. If it's really a lot of text, you can copy it into a word processing program (MS Word, for example) and most of those have a "case-change" function.

I do this all the time at work since when I'm working in ACAD almost everything is caps-on. Then I'll go to an e-mail or something, forget my middle-school typing class (look at the screen/paper, not your fingers), and go "Berk!". Most of the time it's only a half a sentence or so, so I just erase it and start over.

Excel has a function too, 'lowercase' IIRC

I'm using Chrome on my phone and if you highlight the text and press the uppercase button it'll change everything you've highlighted.

in VIM it's just :g~$ to flip case to the end of the line.
