At work, I have my old computer--an all in one Dell--and a new laptop, along with a monitor. Is it possible to use the old all-in-one computer just as a monitor to extend my desktop?

I've seen a few bits of software that can do this, mostly on Linux. Here are some options for Windows:

You can also rip out the display from the all in one (AIO) and actually turn it into a monitor.

EDIT: I found directions here.  It should also apply to AIO displays as well.

NOTE: Synergy and the like let you use 2 computers using 1 keyboard and mouse.  Computer #2 is not actually displaying as an additional monitor for Computer #1.

Found one that actually makes the extra computers act as monitors for the first, it's only free for non-commercial use though:

Some of the old Dell AIO systems had an HDMI input.  Might be worth looking on the back to see what ports are there.

We have a literal stack of sub 24" LCD monitors at our work.  This stuff is basically scrap value and used 19" monitors are $5 at goodwill.  Thats the painless route.

Brand new Viewsonic for slightly more than a C note.  Pony up!
