Specifically looking at the triangular solar "sails."

Costco had a smoking deal on them a few weeks ago, but they were a tad too small and the wife didn't like the colors. Amazon has a whole bunch of them, but they are mostly the same two colors that Costco offered.

I already lagged in i-bolts, what else do I need to know about installing these (rope selection, turnbuckles, is aircraft cable a viable option? etc etc)?

I keep looking at these too. Most of the ones I've seen are aircraft cable if permanently installed. Having just bought a sailboat I keep looking at it and thinking about a solar sail rig for the deck that could be reefed or stowed for severe weather. Maybe something driven through a rube goldberg setup starting with a bike crank.

Remember wind load will be significant. If you anchor to a post, run the cable on out to a ground anchor too.

Speaking of sailboats, the OP may want to check with actual sail shops for other colors. The material will be UV resistant and the shop will know how to work with it.
