I know cookies can be a polarizing subject, but I'll start with a simple truth: Gingerbread cookies are the best. Gingerbread cookies in the shape of my Honda Element are even better! Shoutout to Nicole for making these happen.
What's everybody baking this week?

Gingerbread cookie recipe from the Joy of Cooking book - I believe I have the 2006 edition. No eggs, and you melt the sugar and molasses directly into the butter to start. Finished with a lemon glaze that absolutely makes the recipe.
Our cookies were produced a week ago and they have already been devoured. It's not a cookie but my favorite is Scotch Toffee.
I made Nanaimo bars. They have been eaten. If I make more, I'll take pictures so you can lust over them remotely.
I will probably be baking some mince pies this afternoon. No pictures yet, obviously. :)
Lets see, cutouts, oatmeal chocolate chip, chocolate Carmel chip, soft peanut butter, super soft molasses. Not pictured are the chocolate and cookie butter no bakes or the coconut macaroons.
I have to make another batch of macaroons and chocolate no bakes, and I'm baking a pumpkin pie yet too.

Having gotten a bit familiar with Nanaimo as a place thanks to R2AK... I'm curious about more details on these bars.
In reply to Keith Tanner :
My question is should I take the 30 minutes to drive down to Nanaimo for Nanaimo Bars?
Alright, I'm putting this here so it's easier to find and watch later (but, I'm still open to additional history / anecdote informational posts/links/etc):
In reply to Rons :
Only if you get enough for the whole class.
In reply to Keith Tanner :
Is instant pudding an acceptable substitute for custard powder? I've never heard of that before but I'm interested.

Note that the instructions on the side are likely to be in imperial pints, so either adjust or just use the metric ones. :)
No pudding in mine. I might double up the middle layer on this batch, it was weak last time. From the Canadian Living cookbook.
I will likely also make tollhouse chocolate chip cookies because, while you can make other kinds of cookies, you cannot make better ones.

This is where I'd normally make some sort of snide comment about the kinds of trash people will eat if it has chocolate in it, but that Toll house stuff is still solid even when you get those nasty ass chocolate chips out of it.

I like to make ghost pepper sugar cookies.
In reply to RevRico :
A better choice in my mind is a stiff butter cream icing
Ingredients laid out complete with well used recipe card. Note no walnuts due to allergies.

Also called "surprise! cookies", I expect.
In reply to Rons :
I don't think I'd ever heard of the custard powder before. it's always been just straight buttercream for me. And pausing the video Sleepyhead posted, it looks like all the recipes are buttercream as well. But that does explain why mine is not as yellow as some others I've tried.
Don't suppose you'd be willing to share the contents of that recipe card?
In reply to Keith Tanner :
I will, I was looking at the card and realized it’s a little too well used probably 50 years old and getting harder to read.
The recipe as promised complete with with adaptations over the years. My sister would have printed the original card in Mrs. Kapusta’s cooking class in the very

There were way more yesterday, but the kids demolished them. As you can see they also decorated them. My wife saved me a private stash of non-decorated sugar cookies.
Sleeepywife borrowed sleepymom's oven tonight, and made some experimental chocolate pinecones...
