My theory is that the Taco Bell diarrhea meme is really caused by some combination of food poisoning and incredibly sketchy bargain-bin ingredients, and people just blame the spiciness that is only implied in their cruel mockery of Mexican food.

Chef Kesar Singh would cheerfully make food so hot that he wouldn't eat it. But it took a few visits for his staff to recognize that yes, we wanted the good stuff.

I just want to say that taco bell isn't Mexican food, nor does it impersonate Mexican food.
I lived in Mexico for a while (Quatero). Never even saw a burrito or a Taco or a quessadilla.
They ate chicken and soup.
The food had no spice. Sure there were tortillas. The tortillas were used to wrap up garden salsa and a little salt and basically used as bread.
I was disappointed.

We tipped well because it was good and all this only cost $19.95 at the time, a bargain even for us kids

That's very different from my experience. Oaxaca is my favorite Mexican destination, and the food is excellent. I've never found good food in Mexico hard to find. I'm assuming that you are referring to Queretaro. I haven't been there, but it's hard to imagine that it's that different.

It's a combination of [very] low quality meat and fiber. Presumably the meat (and cheese) is high in fat which would also contribute to the situation, but for all I know the beef is 90-10.
My in-laws can't seem to handle any fast food or greasy food without GI distress; the single exception seems to be McDonalds - but they really only eat their fries. I don't get it... White Castle, Taco Bell, Popeyes... I've never had any issue with any of it. But then I've never really had any adverse effects from any food that wasn't past its best by date.
I've got a cast-iron stomach, but it was severely tested doing construction in the 1980s. Before you had fancy food trucks you had "Roach Coaches", some of which lived up to their name. "Would you like your grease rancid or smothered in hot sauce?"
The food on trucks today is better but they're still referred to (affectionately) as roach coaches around here. Even the lobster roll truck that is at a different location each day but constantly has 15-20 people in line and sells out everyday.

Absolutely this. I've never felt that anything you can get at Taco Hell is particularly spicy, but I avoided the chain for years because every time I ate there, I would be afflicted with a case of raging bowels. They may have improved their food quality of late, but honestly, I've very little inclination to find out. Go figure.
