Boiling syrup is one of the best smelling jobs ever.

take some of the hot syrup and pour it on the snow to make maple taffy. Mmmmmmm.

A lot of people in my area make their own, and there are a few small producers. One of them is just down the road from me, and every spring, for 8 weeks, they have all you can eat pancake breakfast in a "mess hall" with a big stone fireplace, right on the property. We look forward to it every year.

Nothing like a bottle of Grade C dark. Less sugary. More maple-y. One product where the lower the grade, the better it is.

The fact you don't care about syrup makes YOU weird I refuse (literally, I won't) eat syrup that is the fake crap.

Most restraunts in Alberta that serve breakfast dishes (like pancakes and waffles) give you the option to buy real syrup with the meal.

every weekend. I used to make my own syrup with sugar and maple extract... "old" family recipe from California. The wife started buying the genuine article, and now I'm hooked. It's less sweet, and just has a better flavor overall. She read "Little house on the Prairie" to the daughter and if I remember right, they made a taffy like Keith described. Pretty cool.

Once you go maple, you don't go back.

Well, you live in berkeleying Canada, which automatically makes YOU weird!

I'm pretty sure I've never had this REAL syrup you speak of, but I can't really see it as being this big life altering event. Then again, I don't have much of a sweet tooth. More of a bacon and eggs guy.

Real maple syrup isn't that sickly sweet made in a lab and sold for 99 cents a gallon horseE36 M3 from the dollar store. Much more complex flavor then just sweetness.

I eat 2 waffles sandwiching a chunk of ice cream. I thought that was what they're for.

Not normally a fan, but this place up the road serves the best breakfast sausage you've ever had. They are made just around the corner too, and go so well with the real maple syrup, you wouldn't believe it. Bacon with maple syrup? It's better than Bacon and peanut butter.

Jesus Christ you guys will be self righteous about anything these days.

True story my uncle has basically disowned me and my mom because we don't like real maple syrup he makes like 200 gallons a year in GT. It tastes too much like.. well maple. Not a fan at all give me some Auntie J and I'm happy.

poops, this might be a good transition for ya: bourbon barrel aged maple syrup.

I was serious about the hickory, too. it's a little more of a southern thing, I think. it's kind of like grilled/bbq maple syrup (not spicy at all though).

I have great memories of helping out at my grandfathers maple syruo making. Buckets on the trees, coleecting into the "hogshead" ( large barrel) drawn by a team of horses. When thirsty, take the dipper over to the holding tank, take a drink of the cold sap, like slightly sweet water. Cooking various things in the boiling sap made them taste good

Grand mother boiling the syrup down further to make sugar candy.

Pouring hot syrup on snow to make "jack wax, or wacks" never new for sure.

A vendor in Connecticut we buy a lot of data from sent me a container of real live maple syrple at Christmas one year. The first time I tried it, I didn't really like it (not used to it). The second time it was pretty good and the third time I was hooked. We make waffles and pancakes a lot. Then I checked in the groc stores and almost crapped my pants. And I'm not sure that that was real maple syrup.
