Something like Formula Ford where the rules are basically the same wherever you race, so you could just pick some random race in Japan (or wherever) to race that weekend.

With a hypothetical gig like this, though, I'd be hoping to find something with a geographic and temporal schedule that would let me go interesting places and actually have time to grab a leisurely dinner and pint in each locale...
And definitely something with interesting machinery.
I think I would try almost every form of of racing long enough to get some Ken Block style videos online. Then I would copyright the names every form of competition I participated in. When everyone had to pay me royalties for doing absolutely nothing, I would write in big letters on the side of all my competition cars, "I am the 1%".
Have I pushed everyone's buttons yet.

Formula Ford is dead. Porsche 911 GT3 Cup is the answer you're looking for.
Off the top of my head, I'd probably say stock car racing. With that, I can race on dirt or tarmac, circle-track or road course, 4-bangers to 9k rpm V8s.
Rally would be fun, but I'm slow as molasses on stuff I don't know, so I don't think I'd be very competitive.
Short course off road.
You have jumps, you have drifting, you have fender banging. Howling V8s, and spectacular crashes.

And if I were doing on my own dime, I'd buy a motorhome, enclosed trailer and a Legends car with both circle track and roadrace suspension setups hanging off the wall.

For me, it'd be some form of rally. Maybe some open road racing thrown in for variety. Think Targa Newfoundland and Carrera Panamericana. I wonder if one car could meet the rules for both? Hmmm ... Oh, and some open road racing just to mix things up.
Yes, there are cars that run both the Targa and the Panamerica. If you're going to be a pro, do the Targas in the southern hemisphere too!
I'd build a cool rally car then proceed to run the Rally America events (or whatever the new owners wana call it) and try to set my times on every hill climb in the US. Then the following years hit all the targa's.
Bugeyes literally gave my life a new directiion when I was 15. I raced one in autocross very successfully in the 60s and early 70s and was building an HP car for SCCA comp. but life got in the way.
With the budget mentioned, HP is where I'd start. the car would have to be built by Hufakker or a comparable builder and have Panasports. It would probably be yellow as a base color. I actually think I could still drive the wheels off of one. If that ended up not being true, I'd still enjoy trying and the grin would be hard to get off of my face.
If I got ready for something faster I'd like to do some pro. schools in open wheel but I think I'd choose a touring car class to move up to.

One of my friends got infected by Bonneville. He built a car to compete in a very competitive class. He was trying to get into the 200mph club, which means a new world record over 200mph, which would be around 255mph in the class he was competing in. It took about four years to get there. When he finally got a record he told me it cost about $10k per MPH to get there.
There are still a lot of low-buck and underdog teams that go land speed racing. But they rely on a bit of luck to be successful.

You don't have to put the late model away for the winter, just go south. One day when I win the lottery I'm getting a Nascar modified and runing the northern tour and spending the winters in Fla.
