A couple of delicious things happened this weekend. First, as it was a new year's eve tradition growing up, I got a sudden craving for bacon wrapped chicken livers that refused to be ignored. I made a HUGE batch that didn't last long.

Second, while I was at the store procuring bacon and chicken livers, I spied with my little eye whole beef tenderloins on super ultra mega sale at like $2.99 a pound, which I de-fatterized and cut into 12 - 2" steaks.

Anyway, while cutting the steaks, I got a hankerin' for those sweet, sweet livers again, and thought "Eu berkeleying reeka!"

Small piece of chicken liver (I cut them roughly into quarters depending on size as to minimize any unpleasant texture,) wrapped in thin slice of filet mignon, wrapped in bacon...maybe incorporate a little tiny bit of some stinky cheese in there (gorgonzola? gruyere? goat cheese to make it a total food chain obomination?)

If it's as delicious as it is in my head, and as it is part chicken (or 'chicken parts?') part cow, and part pig, it will be called the holy mother berkeleyin trinity. I'll let you know how it turns out.

I'm really hoping to be able to bring a few kilos of sweet Canadian gold from my Volvo fetching trip. How are they at the border about meat coming across these days?

Beef and citrus were a no-no and probably still are. I've never had an issue bringing stuff like that into Canada, and I brown bag my lunch when I work in the U.S. (4 days/wk). They never bother me.

As long as you're not bringing back 500lbs of the stuff and it's in unopened packages, you should be ok. That being said.....

Gorgonzola would be the way I'd go. Or maybe a Maytag Blue - you know, buy American and all that.
