I need to lay some Pergo flooring in our house. Substrate is unsealed concrete slab and we're in Georgia (lots of humidity and precipitation. ) The flooring is Pergo Gold with padding on the back. Since you guys know everything, what should I be using for underlayment?  Links to products would be awesome.

We've just began installing Pergo in our house, and are using what essentially amounts to a heavy plastic vapor barrier.  The Pergo we are using already has the foam backing attached to the planks.  The barrier comes ins large rolls at the home stores and you tape the seams.

For what it is worth we are in California, have an unsealed concrete slab, and live in an area of mostly clay, and with the several years of drought followed by a few wet winters have experiences some fairly significant shifting/cracking in the foundation.  So far the floors are holding up great.

I used lauan plywood over the 1950s asbestos tiles in my kitchen in my kitchen, Pergo went on top.  Lauan is 1/4" looks almost like veneer, 4X8 sheet is $15.  It smooths out the bumps nicely and gives a nice smooth gluing surface.
