My wife wants to put a vintage door on her pantry.  She's found one but it is 83x32. The door there now is 29.75x72.  Matching height isn't an issue but can I just shave off a bit from each side to match width?  What would I do about the door knob hardware?

Assuming it's a solid door, I'd cut it to match the existing latch in the jamb.  So ~2" off the hinge side and whatever off the top and bottom to make the latch line up.  It's a lot easier to cut new mortises (you'll have to anyway if you cut the door to be centered) for the hinges than it is to relocate the knob.

11" is a lot of height to remove from a door. Take a look at the top and boards and picture what it will look like with that much material gone.

Would the wall it's going on allow you to install it with the sliding "barn door" style hardware that is all the rage?
