Anyone got any hints. Just tried a crock pot ribs recipe. It worked ok, but not stellar.

The biggest problem with crock pot pork recipes, is dealing with the fat. With a roast or loin, you can trim 90% of the fat. With a butt or ribs, that's kind of hard to do and things come out too greasy for me. I've never been successful cooking fatty meats in a crock pot. They are bearable, but that's it. Trimming all the fat possible, helps a lot.
Do ribs and butts on the grill so the excess fat can drip free.
I don't often do ribs anymore... but used to boil them with a couple of bay leaves and some cloves of garlic. Then brush them with a sauce made with maple syrup, tomato sauce, tabasco and brown sugar and throw in the oven or grill. Yum.

I think you nailed it. The ribs seem fatty.
I had pig wings for lunch last weekend. They were breaded and deep fried individual short ribs. They were pretty good.

And for the love of god and all things holy, don't boil them.
I've tried a couple different ways without a smoker or grill (apartment living). Ended up with the best being in the oven, on a rack, with foil over them. It was decent, but at the end of the day I was better off buying it from a rib joint or the grocery store already made.
Dry rub and slow cooked in oven on a broil pan, so the fat can run down.
Meet falls off the bone. 300F for 2 1/2 hours.

I put them in the crockpot until they almost fall apart then throw them on the grill. My mom used to boil them before grilling but I find the crockpot produces a more tender rib. If you have time, low and slow in the oven then on the grill. If you have all day, low and slow on the grill.
Some southern vinegar pork ribs are the ticket:
Cut up into 3-4 rib hunks and boil in apple cider vinegar.
Take Sweet Baby Ray's Original and cut it 1/3 Gulden's Spicy brown. (or whatever you like...)
Put the ribs on the grill. Finish them off and then in the last 5 minutes brush the sauce on thick. Don't let it burn on there, just thicken it.
Hork them like some kind of animal with a good IPA on the side.
My dad does good pork ribs. Something like an hour on the grill on low then two hours in the oven at 300°F.
Fall off the bone.
