The Coke Museum in downtown Atlanta is kind of what happens when what would be a small, quirky corporate museum gets built on a zillion dollar budget. Unfortunately, the tickets aren't as cheap as you might think, but it is an interesting site.
It's usually not open for tours, but you can take a drive past the Little White House on the north side of Atlanta.

If you're taking #7 to Sharbot Lake, you'll drive right through my home town of Peterborough. There's a fairly decent Vietnamese restaurant on #7, which is your typical wasteland road of motels, malls and fast food outlets. Let me know – we could meet! I was going to mention that place too but Madison seemed out of the way. I happened onto it during a work road trip but it was closed midweek. I keep thinking I need to go back and check it out. The website looked badass.
If you're taking I-95 up the east coast, somewhere just a few miles off the interstate in Wilson, NC, is Acid Park. It is best viewed at night. I'll see if I can find directions for you. :D
Also, if you happen to come through California on your way back to Austin, you and the Mrs. have free crash space in north San Jose. :D

The Henry Ford Museum is a must for anyone with mechanical inclinations if you're near Detroit. It's worth it just to check out all the old steam engines and generators, not to mention Thomas Edison's last breath.
I live in Niagara Falls Ontario. See the falls if you haven't - avoid everything else at all costs. it's a giant time and money suck.
I recommend eating before or after Niagara Falls Ontario. Cheap eats nearby? There's a Wegman's grocery store (don't let this turn you off) on Military road in the Falls NY. Their subs are HUGE, reasonably priced and very very good. A large sub will feed 2. I'm fat and can't finish one myself (most days...). The older lady is a sandwich goddess - I want her to adopt me. There's a blond girl with glasses and a bit of a behind who's sandwich deficient - get her? Meatball sub ONLY. I don't care if you hate meatball subs... Anyone else is reasonably competent.
Localish food - Voila's subs, also on Military (steak and cheese sub is WOW) La Galera Mexican Food on Niagara Falls Blvd off 190 is nice and more on the traditional side (this is WNY though so YMMV on the "authenticity") Mighty Taco On Military (Packard road Exit on the way to Queenston/Lewiston bridge) is a LOT better than Taco Bell and VERY FAST if you're trying to make time. Buzzy's Pizza on N Falls Blvd is good local WNY pizza and wings, though my coworkers mostly prefer Jaco's on Buffalo Ave - it's not as convenient to the 190 or Rainbow bridge. I like Buzzy's better. There's also a bevy of "apostrophe S" restaurants on N Falls and Military Road if you want something more sit-downy. Applebee'S, Chili'S, Perkin'S, Bob Evan'S, Buffalo Wild Wings'S - you get the idea....
On the Canadian side of the falls, the food is overpriced and bland, but all the big players are there if you can find them. Fast and cheap? If you take the Rainbow onto Roberts/420, turn right on Stanley Ave (before the tourist info Center) and follow it past the cemetery and around the bend on to Thorold Stone Road. There's a McD's on your right. Fast, cheap and the kids will eat it. Continue on Thorold Stone Road and you'll hit a QEW North Toronto Exit and off you go. Yes, I'm actually recommending McD's over EVERYTHING else in NF Ontario.
There's also a gas station between the McD's and the QEW Exit if you're in a pinch, but do plan to fill up before Crossing into Canada ($$$!!!). there's a station on Military and Packard across from Mighty taco and down the street from most of the other places I mentioned. There's also a gas station across from Buzzy's on N Falls.
