You mean something OTHER then a rally car?

QFT. If not a rally car then maybe something like a wax wagon. Modified to go really fast, with all the rear seats removed for more moonshine space.
So, basically, a lesser degree of rally car.
We used to run it in 10 year old well maintained trucks with tonneau covers. If you don't draw attention to yourself you don't get caught.
At least that's what I've been told. ..
How about something like a faked comcast van? Cable trucks have an excuse to be on back roads or in the woods, windowless van has lots of hidden space, you could cover the moonshine with boxes of routers, etc...

True... And from what I know of shine areas an uncorked boxer is liable to get you a good old boy inspection.
Cable van is a good idea. We had a similar discussion at work about running guns. I would get Caddy DTS, the older style not the new low looking one. A light color, padded top, and white walls. Get two older men in golf attire to drive it and they could run up and down I 95 all day blending in with the other retirees.

Isn't that in Dawsonville? We very nearly moved to Dawsonville, as my wife had a job offer from the school district. She chose Paulding instead, so we're in Acworth now.
The areas i used to run around in an uncorked boxer, or anything vaguely hopped up importish, would get more than an inspection. Sheriff would yank you outta the car, search it, and confiscate anything. But a guy in a truck...
I had a misspent youth. Im grateful not to be that guy anymore.

Certain people are monitoring this and would like to have a discussion with you now
My great uncle used a Caddy
Kinda depends on the area that you are in, someplace where you have sufficient dirt roads a rally rig would be great but most would have limited cargo capacity. If you are delivering in a small town or urban environment do a Schwan's truck. It would be perfectly normal for you to be lugging a couple boxes up to someone's door

So what else is new.

There's more truth in the moonshiner show than you realize
I would think it comes down to where you are running it. I would also say stealth trumps speed.
Around me, a sleeper rally Forester.
FedEx critical package van with a false bottom would be the safe bet for me.
Volvo V60R for my own personal usage as needed.
Stealth over speed these days.
Critter control truck. A couple of caged varmits will help your story.
