An Engineer at work appointed herself the Morale Officer and has deem one day a month as cookie day, What would you leave for Santa day, etc.
Today is Salsa Day. I made this, goes well with beer as well as black coffee. You can chop a few jalapenos or serranos depending on your audience.
Mango Salsa
1 medium red onion, diced
1 green pepper, diced
1 red pepper, diced
1 ripe mango cubed, peel it first.
1 can black beans, drained
2 lbs. Tomatoes.
(use 50/50 red & yellow for color)
1 splash of Italian Salad Dressing
Mix all ingredients in a bowl.
Pepper to taste. Do not add salt, this drains the tomatoes.
You work too hard, I would have just come in dancing.

Very similar to a recipe I've used for years.
Try adding a handful of chopped fresh cilantro. Also maybe chopped fresh jalapeno to taste if you like a little kick.
It is particularly delicious served over grilled fish, or in fish tacos.

My favorite recipe, which I call 'Salsa of the Gods' but it's more like a pico de guyo:
3 Jalapenos, seeded and chopped
3 habaneros, seeded and chopped
3 cloves garlic, minced
4 celery stalks, chopped
6 roma tomatos, chopped
1/3 of a bunch of cilantro, chopped
2 TBS lime juice
salt & pepper to taste
This does not hang around long.
I like it best with the snyder's white corn tortilla chips.
