Girlfriend is like a master fabricator when it comes to food. She can look at a set of ingredients and make up something on the spot.

Luckily, this recipe is something even I could come up with since its incredibly simple (as all good food is)

corkscrew pasta, cooked and drained over spinach leaves (bag of spinach salad), while the pasta is cooling and the spinach is "cooking" make up the white sauce, we used a canned one as a base since we're always in a hurry in the evenings, add some fresh mushrooms, garlic, etc warm it up in a skillet. The sausage is chicken and garlic that I picked up at Costco (they were demo-ing it and damn that's good stuff) and is simply browned in a skillet. Combine the whole thing on a plate and grade fresh parmesan on top, then poor a nice glass of Firesteed Cayalla.

I do similar, but Ill make the sauce myself.

Some nice white wine depending on how sweet you like the sauce depends on the white, Heavy cream, oregano, salt, pepper, cayenne, 3cloves garlic, and 4 shallots.

Brown the garlic and shallots, add a cup of wine about half a cup of cream. Add oregano, salt, pepper, and cayenne use some sort of reasonable amount, its how I do it simmer for 10 minutes uncovered. Thats a quick dirty version....

Yep, if there was more time we'd have probably made the sauce ourselves. Instead adding some decent fresh ingredients helps.

Carbonara in Australia is a sauce made from heavy cream, eggs and bacon on Fettacini noodles, it rocks
