4clindrfury's SOS-y manwich thread has reminded me that sitting in my fridge waiting to become dinner tonight is a pound of lowfat ground beef. Now, I would usually turn this into chili, spaghetti sauce, meatloaf, sloppy joes or Campbell's mushroomy salisbury steak (the ultimate trashy-but-good recipe), but I was just wondering: WWTGRMBD? Have a favorite? Bonus points, as always, for something that won't make me drastically fatter. :-)

1 lb ground beef 1 package ramen noodles 1 small bag mixed vegetables or 2 cups leftover and chopped vegetables water

Heat vegetables in microwave. Brown meat. Add vegetablesto meat. Add seasoning pack from ramen (optional) and/or seasoned salt, Cajun seasonings, Baconsalt ... Break ramen into flat squares, add to bottom of skillet. Add water (I eyeball the amount, depends on skillet size and shape.) Cook until ramen is done.

Lasagna

Beefy-Mac or any of the chili-mac/ spaghetti-mac variants

Maybe some stuffed peppers?

Tacos or burritos go over big at my house.

Cabbage rolls?

That's about the end of my ground beef recipe idears (additions to your list, anyway).

1LB Ground Beef 2 packs of taco seasoning. 1 smalliesh bag of Doritos 2 medium tomatos 1 large onion. 2 packages of cheese (Jack or cheddar)

Cook and drain ground beef, add taco seasoning. Chop onion, tomatoes and mix in with crunched doritos. mix cheese into mixture and bake in the over @ 325 for 15 minutes.

Serve.

Slant Valiant's recipe sounds interesting, but as a lover of Italian food.....I'd go with Lasagna or "basgetti.

I'm in the mood for something different, is all. I'm getting an idea... some sort of cabbage soup... would go great with the fresh bread I just bought at the farmer's market this morning.

If you want something soupy, maybe a creamy potato and leek soup with mini meatballs (minced onion, garlic, breadcrumbs, an egg, and spices). You could definitely use cabbage instead of leeks; it is a lot cheaper, after all.

Oh, yeah, I'm liking that soup. And onion to round out the cabbage flavor...

Keep 'em coming! (And FYI, I also have bought beets with greens at the market, though that could get weird. Not sure I could sell the fambly on borscht, but... maybe another, possibly weird direction?) Maybe the cottage pie with some rockin' sauteed beets with balsamic vinegar and honey?

chop up about 5 pcs of bread in the processor, season with whatever you want, add beef and 1 egg and make meatballs(i always use turkey though, i dont eat beef).

mix in campbells cream of mushroom soup in the pan you made the meatballs in to get all the drippingy goodness, use chicken stock instead of water. add cooked noodles.

cheap beef stroganoff.

or bring some water to a boil and toss in 1# sliced carrots, one head celery, a couple onions cut large, some garlic, potatoes cut into cubes. then add meat in ball form. add a large can of tomato paste. salt/pepper to taste.

Meatloaf!!!
I'm obviously in college, and when I got back home for the holidays nothing in my cooking. Everybody at home loves whatever I make. Everything ends up being some sort of Omlette or pizza. For ground beef, personally I'd choose the egg end of it. It usually depends on what I have around too.

A personal favorite omlette involving ground beef:
Ground Beef (however much you want)
Eggs (enough to make it an omlette)
Tomatoes
Onion
Garlic (I like it and the onions in the "stay back or you will die of my breath" amount)
Jalepenos
CHEESE!!!

Put in in a pan with some oil, fry it up, put down some bread to soak up and fry in the remaining grease... Tastes GREAT. Holds me all day too, which is good for when I can't get food until after class. Don't do it everyday, more like once a week. Unless you only want to live to Fifty.
For healthier versions, use egg whites and just some PAM.

Speaking of Gordon Ramsey and meatloaf... saw this week's Kitchen Nightmares, and while the restaurant owner thought the idea of folks wanting to eat meatloaf at a restaurant was a non-starter, even when her husband's meatloaf was roundly praised by customers...she thought "never again". My Mom makes a good meatloaf, but I know that M.S. can do better....especially with the recipes she has gotten so far.

Almost makes you wonder what a Grassroot Cookbook would look like....hint, hint?

C'mon people, it's really not that difficult; wrap in bacon, fry in lard.

PS: Our buddy Bob (who makes the best burgers I've ever had) taught me the key to a good burger is lots of fat; so much so that he won't buy the 75/25 stuff without having the butcher add more. Lowfat burgers FTMFL.

Beets are pretty love 'em or hate 'em so I would keep them on the side if I was making them for others. However, I imagine that the greens could be used in place of cabbage. One of my favorite salads has beets, avocado, and a simple vinaigrette dressing. A hearty soup, salad, and bread is a pretty proven dinner combination.

My first oddball thought (off-hand):
1 lb of ground beef
6 large eggs
1/3 cup of milk
1 bag o' hash browns
1/2 chopped onion
1/2 diced green pepper
spice to taste -- recommend Tony Chachere's
1/2 cup of shredded extra sharp cheddar

Brown ground beef. Cook hash browns with green pepper. In a large mixing bowl, scramble eggs together with milk. Mix in cooked ground beef, hash browns and green peppers. Pour mixture into large casserole dish. Bake for 20 minutes at 350. Add shredded cheddar to top, and bake an additional 10 minutes.

All numbers are approximates.

Probably not what you're looking for today, but you owe it to yourself to try this.

1 lb gr beef

parsley

1 tsp salt

1/2 tsp pepper

1/2 cup bread crumbs

1/2 cup milk

Mix beef, chopped parsley, breadcrumbs, milk, salt, pepper, and form into small meatballs.

Melt 2 tbsp butter, and 2 tbsp oil, brown meatballs, and remove.

Chop 1 med onion and saute.

Add 2 tbsp flour, and 2 tbsp paprika.

Brown stirring often, an add 10 oz can consomme, 1 tsp salt, 1 tsp pepper, 1/4 tsp sugar.

Put meatballs back in, and cook about 30 mins covered, on low heat.

Stir in 1/2 cup sour cream, serve on noodles, or spätzle (I make mine from scratch), rice, or potatoes.

The sauce is awesome, the meatballs are unbelievably tender.

Strokenoff (or, more commonly, stroganoff).

Brown 1 lb ground beef
Cook one bag of egg noodles
Mix together and add sour cream and worcestershire sauce to taste.

Delicious, easy, and definitely not nutritious...cream and salt make everything taste good, though!

Jessica made me shepherd's pie the other day, first time we've tried it at home. Similar ingredients to a stew, a little more work to do mashed potatoes, but the end product is really, really good if you don't mind the extra prep time.

No bonus points here, but this was what we chowed down on tonight, with plenty of leftovers for the blizzard weekend:

1 lb ground beef, browned + drained

1 lb pasta pf choice, cooked ( I prefer penne)

1 green pepper, chunked and sauteed with beef

1 onion, chunked and sauteed with beef

1 lb extra sharp cheddar cheese, cubed in 1/2" chunks

4 cans of tomato soup

1 small can of tomato paste

1 large can sliced mushrooms

Combine above in your turkey roaster and mix throughly, reserving about 1/4 of the cheese to throw on top.

Bake in the oven at 350 for 30-40 minutes until it starts to brown on top.

Profit!

One of my favorite things grandma use to make. She called them dumnoodles no clue where that came from.

The Fixin's:

Hamburger, Sauerkraut, Onion, Biscuit Dough (home made or canned), salt and pepper.

Take your burger and cook it in a frying pan breaking it down as much as possible salt and pepper to your usual tastes. Cut your onion into thin strips and toss in the pan with the burger. Drain your kraut and squeeze as much of the juice out as you can then toss it in the pan. Let it all cook down a bit garlic can be added and recheck your salt and pepper levels to your taste.

Take your biscuit dough and and press out thin rounds about 6-8 inches across. Put a wad of the meat mixture in the middle of the round and fold over sealing the edges. Toss them in the oven at about 350 until golden brown. Serve fresh out of the oven or even good when they have been sitting out for a few hours and are cooled down.

1 lb Ground Beef
1 large Onion
1 1/2 cups Minute Rice
1 Quart chopped Tomatoes ( I use Roma tomatos we grow and can ourselves)
Beef Bullion Powder to suit (I use 1 Tbsp)
Chilli Powder to suit (I use 1Tbsp) Cumin to suit ( 1/4 tsp ?)

Preheat oven to 325
Brown Ground Beef
Cut Onion in to 1/2" slices and then cut each slice in half

Put all ingredients in caserolle with cover and put in oven
Cook until rice is cooked (30 min ?) you may have to add some water depending on the amout of liquid in the tomatos.
