My latest greatest ale is one we just bottled from a private brewing session at the local brewery. It got dubbed "Beer X". We don't know how to categorize it.
The initial idea was: dark ruby ale, with a natural spiciness (but no added spices). What we ended up with wasn't quite what I'd initially imagined, but was damned good.
Here's what made it: Two Yeasts.
Yup. Two. A Belgian yeast (adding some fruityness) and a weizen yeast (adding clovey spiciness). And then a moderate helping of some fairly sharp hops. Oh, and they pulled out their nicest malts too.
The end result... wow. I love it. The guy who was helping bottle it said that it may be the best bear he's ever tasted, and he hopes we kept the recipe, because you could start a brewery with it. Damned good.
Here is my analysis of Mad Elf: The first whiff when poured into my 20 oz. glass is very overpowering and you can smell the malts and the cherry. The taste is literally a cluster E36M3 of cherries, honey, alcohol, and malt and it has an aftertaste. This is definitely a potent brew and most likely a holiday/special occasion beer for me at best. I don't think I this could be a daily driver beer for this time of year.
The issue with belgian beers is they can get the alcohol content very high, I don't know if they add sugar or use special yeast, but sometimes you have to watch out for that stuff. I remember going to a bar when they had belgians beers on tap for sale and after a few 8percenters you are half drunk. Good luck with your brew!
