I am currently trying to build my resume, one gaping hole that I would like to fill and get more experience is leadership. I would eventually like to be in management, I have my Masters in Organizational Leadership and have experience coaching, but I am trying to get into that next level of my career. One avenue that I am currently pursuing is becoming a Adjunct professor, but I am looking for something else, I am not interested in coaching because I just don't have the time commitment or the passion to pursue it. Do volunteer positions in leadership help a resume? Unfortunately I just don't have any opportunity at my current employer and don't want to miss out on a management position because of lack of experience.

Yes. Volunteer, but at a leadership level. It can be a great way to network and find other positions/companies.
